Instructions

  1. Prep the strawberries: In a small bowl, toss the finely chopped strawberries with sugar and lemon juice. Let them sit for about 10 minutes to macerate.
  2. Make the cheesecake filling: Beat the softened cream cheese with sugar until smooth and creamy (about 2 minutes). Add the egg yolk and vanilla extract, then mix until fully combined. Set aside.
  3. Prepare the brownie batter: Melt the butter and chocolate together, either in a microwave in 30-second bursts or over a double boiler, stirring frequently to avoid burning. Let it cool slightly.
  4. Add sugar to the melted chocolate and butter mixture, stirring until combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Sift together the flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Preheat oven to 325°F (163°C). Grease an 8×8 inch pan or line it with parchment paper.
  7. Spread half of the brownie batter evenly into the pan, smoothing the surface.
  8. Carefully spoon the cheesecake filling over the brownie layer in dollops, then gently spread it out, leaving a small border from the edges.
