A quick and easy 30-minute dinner featuring salmon fillets with a crunchy Everything But the Bagel seasoning crust, delivering a perfect balance of savory flavors and flaky fish.

Ingredients

  • Salmon fillets, skin-on, about 6 oz (170 g) each
  • Everything But the Bagel seasoning – about 2 tablespoons
  • Panko breadcrumbs – 1/2 cup (60 g) (use gluten-free panko if needed)
  • Olive oil – 2 tablespoons
  • Mayonnaise – 2 tablespoons
  • Lemon juice – 1 teaspoon, freshly squeezed
  • Salt and pepper to taste
  • Optional: Fresh dill or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease your cast iron skillet.
  2. Pat the salmon fillets dry with paper towels to ensure the crust sticks and crisps properly.
  3. Season the salmon lightly with salt and pepper on both sides.
  4. In a mixing bowl, combine 2 tablespoons of mayonnaise, 1 teaspoon of fresh lemon juice, and 1/2 cup panko breadcrumbs. Stir in 2 tablespoons of Everything But the Bagel seasoning until evenly mixed.
  5. Spread the mayo mixture evenly over the top (skinless side) of each salmon fillet, pressing firmly to create a thick crust layer.
  6. Drizzle or brush 1 tablespoon of olive oil over the crusted side for extra crispiness.
  7. Place the salmon skin-side down on the prepared baking sheet or skillet.
  8. Bake for 12-15 minutes until the crust is golden brown and salmon flakes easily with a fork. For a crispier top, broil for an additional 1-2 minutes, watching closely to avoid burning.
  9. Remove from oven and let rest for 2 minutes before serving. Garnish with fresh dill or parsley if desired.

Pat salmon dry to ensure crust sticks well. Press crust firmly onto salmon. Drizzle olive oil on top for better browning. Use skin-on fillets for moisture retention. Broil briefly for extra crunch but watch carefully to avoid burning. Leftovers reheat best in oven or skillet to maintain crispiness.
