  • 46 small pretzel buns (soft, fresh)
  • 2 tablespoons unsalted butter
  • 2 tablespoons yellow mustard
  • 1 tablespoon mayonnaise (optional)
  • 46 slices Swiss cheese
  • Thinly sliced pickles (optional but recommended)
  • 1 tablespoon horseradish sauce (optional)

Instructions

  1. Slice the pretzel buns in half horizontally. Pat the corned beef slices dry with a paper towel to remove excess moisture. Preheat your skillet over medium heat.
  2. Add 1 tablespoon of butter to the skillet and toast the cut side of the pretzel buns until golden brown, about 2-3 minutes. Remove buns and set aside.
  3. Add the remaining butter to the skillet and place corned beef slices in a single layer (cook in batches if needed). Fry for about 3-4 minutes per side until edges are crispy and caramelized.
  4. Place a slice of Swiss cheese on top of each corned beef slice while still in the skillet. Cover with a lid or foil and melt the cheese for 1-2 minutes.
  5. Spread mustard and mayonnaise (if using) on the toasted buns. Add the cheesy corned beef, a few pickle slices, and a dollop of horseradish sauce if desired.
