  • 2 large eggs, beaten
  • 1 ½ cups Italian-style breadcrumbs (150g)

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • Cooking spray or olive oil
  • Marinara sauce (homemade or store-bought)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare three shallow bowls: one with ½ cup flour, one with 2 beaten eggs, and one with a mixture of 1 ½ cups Italian-style breadcrumbs, ¼ cup grated Parmesan, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, and ¼ tsp black pepper.
  3. Cut mozzarella sticks in half or into 3-inch pieces if they are very long.
  4. Dredge each stick in flour, shaking off excess.
  5. Dip into beaten eggs, letting excess drip off.
  6. Roll thoroughly in breadcrumb mixture, pressing gently to adhere.
  7. Repeat the egg and breadcrumb coating steps once more for a double coat.
  8. Place breaded sticks on a parchment-lined tray and freeze for at least 30 minutes.
  9. Arrange frozen sticks on a wire rack over a baking sheet and lightly spray with cooking spray or brush with olive oil.
  10. Bake for 10-12 minutes, flipping halfway through for extra crunch, until golden brown and crisp.
  11. Warm marinara sauce if store-bought or simmer homemade sauce while sticks bake.
  12. Let sticks cool for a minute or two before serving with warm marinara sauce.

Freezing the breaded sticks before baking is crucial to prevent cheese from leaking. Using a wire rack allows even crisping. If no wire rack is available, flip sticks halfway through baking.
