  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of salt
  • Optional toppings: chopped green onions or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Wearing gloves if sensitive, slice each jalapeño in half lengthwise and carefully scoop out the seeds and membranes.
  3. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder (if using), black pepper, and a pinch of salt. Mix until smooth and creamy.
  4. Fill each jalapeño half with the cream cheese mixture using a spoon or small scoop.
  5. Cut each bacon slice in half crosswise. Wrap one half slice of bacon around each filled jalapeño, tucking the end underneath to secure it. Use a toothpick if needed.
  6. Place the poppers seam side down on the wire rack over the foil-lined baking sheet.
  7. Bake for 20 to 25 minutes, checking around 15 minutes. Bacon should be bubbly and starting to crisp, jalapeños softened but not shriveled.
  8. Optional: Broil for 1-2 minutes at the end for extra crispiness, watching closely to avoid burning.
  9. Remove from oven and let cool slightly before serving.
  10. Garnish with chopped green onions or cilantro if desired and serve warm.
