  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 12 teaspoons truffle oil

  • For the Garlic Aioli Dip:
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Wash and peel the russet potatoes (peeling optional). Cut into even-sized fries about 1/4 to 1/2 inch thick.
  2. Place cut fries in a large bowl of cold water and soak for at least 30 minutes (up to 1 hour) to remove excess starch.
  3. Drain and pat fries completely dry with a kitchen towel or paper towels.
  4. Toss the dried fries with 2 tablespoons olive oil, salt, and pepper until evenly coated.
  5. Preheat air fryer to 380°F (193°C) for about 3 minutes.
  6. Place fries in a single layer in the air fryer basket, avoiding overcrowding.
  7. Cook for 15-20 minutes, shaking the basket every 5 minutes for even crisping. Watch closely to prevent burning.
  8. Transfer fries to a bowl while hot. Sprinkle grated Parmesan and drizzle truffle oil over fries. Toss gently to coat evenly.
  9. While fries cook, whisk together mayonnaise, minced garlic, lemon juice, olive oil, salt, and pepper in a small bowl. Let sit for at least 10 minutes.
  10. Serve fries immediately with garlic aioli on the side. Optionally garnish with chopped fresh parsley or chives.

Notes

Soaking fries in cold water removes excess starch for crispiness. Dry fries thoroughly before air frying. Add Parmesan and truffle oil after cooking to avoid burning cheese. Shake basket during cooking for even crisping. Garlic aioli flavors improve if rested before serving. For extra crispiness, increase air fryer temperature to 400°F for last 3-5 minutes but watch closely.
