Ingredients

Scale
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed (or about 1.5 cups cooked from dry)
  • 1 to 2 tablespoons olive oil (extra virgin recommended)
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin (optional)
  • A pinch of cayenne pepper (adjust to taste)
  • Lemon zest from 1 lemon (for lemon herb variation)
  • 1 teaspoon dried oregano or thyme (for herbal brightness)
  • 1 teaspoon chili powder (for spicy versions)
  • 1 tablespoon nutritional yeast (optional, for cheesy flavor)

Instructions

  1. Drain and pat dry chickpeas thoroughly using a clean kitchen towel or paper towels to remove excess moisture.
  2. Preheat air fryer to 390°F (200°C) for about 3 minutes.
  3. In a mixing bowl, toss dried chickpeas with olive oil, sea salt, garlic powder, and your choice of flavoring spices until evenly coated.
  4. Arrange chickpeas in a single layer in the air fryer basket, avoiding overcrowding.
  5. Air fry at 390°F (200°C) for 15-20 minutes, shaking the basket every 5 minutes to ensure even cooking.
  6. Transfer chickpeas to a cooling rack or plate lined with paper towels and let cool to crisp up further.
  7. Serve immediately or store in an airtight container once cooled.

Notes

Dry chickpeas thoroughly before air frying for best crispiness. Shake the basket every 5 minutes to avoid uneven cooking. Cool chickpeas on a rack to enhance crunch. Store in an airtight container at room temperature for up to 3 days; avoid refrigeration to prevent sogginess. Reheat in air fryer for 3-5 minutes to refresh crispiness.
