  • 1/4 cup (60ml) unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup (optional)
  • 1 tbsp chia seeds (optional)
  • Fresh strawberries for topping
  • Crushed nuts or granola for topping (optional)

Instructions

  1. Peel and slice the ripe banana into chunks. Measure 2 cups (300g) of frozen strawberries and break up any clumps.
  2. Add frozen strawberries, banana slices, 1/4 cup (60ml) unsweetened almond milk, and 1 tsp vanilla extract into a blender or food processor. Add 1 tbsp honey or maple syrup if extra sweetness is desired.
  3. Pulse to break up the fruit, then blend on high speed for 1-2 minutes, stopping occasionally to scrape down the sides until smooth and creamy like soft-serve ice cream.
  4. If using chia seeds, stir them in after blending to add texture and nutrition.
  5. Scoop the nice cream into a bowl and garnish with fresh strawberry slices and crushed nuts or granola if desired.
  6. Store leftovers in a freezer-safe container for up to 3 days. Let soften at room temperature for 10 minutes before serving again and stir gently.
