Creamy Tuscan Garlic Chicken with Sun-Dried Tomatoes

A quick and easy creamy chicken dish with sun-dried tomatoes, garlic, and spinach, perfect for cozy weeknight dinners with a Tuscan twist.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 large garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 2 cups baby spinach
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and dried Italian seasoning. Let rest for about 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
  3. Sear chicken breasts for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove and set aside covered loosely with foil.
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet and sauté for 1-2 minutes until fragrant and garlic is golden but not burnt.
  5. Pour in heavy cream and chicken broth, stirring well and scraping browned bits from the pan. Simmer gently for 4-5 minutes until sauce thickens slightly.
  6. Stir in Parmesan cheese and baby spinach. Cook until spinach wilts and cheese melts, about 2 minutes.
  7. Return chicken breasts to the skillet, spoon sauce over them, cover loosely, and simmer for 3-4 minutes to combine flavors and keep chicken moist.
  8. Taste and adjust seasoning with salt, pepper, and optional crushed red pepper flakes.
  9. Serve immediately with extra sauce spooned on top.

Notes

If sauce is too thick, add a splash more chicken broth or cream. If too thin, simmer uncovered a bit longer. Avoid overcrowding the pan to ensure a good sear. Let chicken rest after searing to keep it juicy. Use freshly grated Parmesan for best melting. Burnt garlic tastes bitter, so watch closely when sautéing.
