A delicious and easy-to-make stuffed French toast filled with creamy vanilla-scented cream cheese and fresh macerated strawberries, perfect for brunch or a cozy breakfast.

Ingredients

Scale
  • 8 slices thick brioche or challah bread
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, hulled and finely chopped
  • 4 large eggs, room temperature
  • 1 cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, for cooking
  • Optional toppings: maple syrup or honey, powdered sugar for dusting, fresh mint leaves for garnish

Instructions

  1. Prepare the cream cheese filling by beating the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  2. Macerate the strawberries by tossing them with a teaspoon of sugar (optional) and letting them sit for 10 minutes to release their juices.
  3. Make the egg custard by whisking together eggs, whole milk, granulated sugar, ground cinnamon, and salt until fully combined.
  4. Assemble the stuffed French toast by spreading about 2 tablespoons of cream cheese mixture on one slice of bread, topping with a tablespoon of macerated strawberries, then placing a second slice of bread on top and pressing edges to seal.
  5. Dip each sandwich into the egg custard, soaking for 20-30 seconds per side without becoming soggy.
  6. Heat a nonstick skillet or griddle over medium heat and melt 1 tablespoon butter. Cook the soaked sandwiches for 3-4 minutes per side until golden brown and slightly crisp, adding more butter as needed.
  7. Serve warm, dusted with powdered sugar, drizzled with maple syrup, and garnished with fresh mint leaves if desired.

Notes

Use thick, sturdy bread like brioche or challah to prevent sogginess. Do not over-soak the bread in custard to avoid falling apart. Cook on medium heat to ensure golden crust without burning. Press edges gently if filling leaks during cooking. For gluten-free, use gluten-free bread; for dairy-free, use plant-based cream cheese and milk.
