A creamy, refreshing pink drink made with coconut milk, hibiscus tea, and strawberry syrup that tastes just like the fancy café version but is easy to make at home.

Ingredients

Scale
  • 1 cup unsweetened coconut milk (full-fat preferred for creaminess)
  • 1/2 cup brewed hibiscus tea, cooled
  • 1/4 cup water
  • 2 tablespoons strawberry syrup or puree (homemade or store-bought)
  • 1 tablespoon cane sugar or sweetener of choice
  • 1 teaspoon vanilla extract
  • Ice cubes (for serving)
  • Fresh strawberries or edible flowers (optional, for garnish)

Instructions

  1. Brew the hibiscus tea: Boil 1/2 cup (120 ml) water and steep 1 hibiscus tea bag for 5-7 minutes. Remove the tea bag and let it cool completely (about 10-15 minutes).
  2. Mix the base: In a blender or large mixing glass, combine 1 cup (240 ml) unsweetened coconut milk, the cooled hibiscus tea, and 1/4 cup (60 ml) water.
  3. Add sweetness and flavor: Add 2 tablespoons strawberry syrup or puree, 1 tablespoon cane sugar (or preferred sweetener), and 1 teaspoon vanilla extract. Blend or whisk until smooth and well combined. Adjust sweetness if desired.
  4. Chill and serve: Fill a glass or pitcher with ice cubes, then pour the creamy pink drink mixture over the ice. Stir gently to chill evenly.
  5. Garnish and enjoy: Top with fresh strawberry slices or edible flowers if desired. Serve immediately.

Notes

Use full-fat coconut milk for best creaminess. Brew hibiscus tea for 5-7 minutes for optimal flavor and color. Cool tea completely before mixing to avoid curdling. Adjust sweetness to taste. Serve immediately over ice to prevent dilution. For a frothier texture, blend with ice cubes for a few seconds. Hibiscus tea can be brewed a day ahead and refrigerated to deepen flavor.
