  • 4 cups broccoli florets (about 300g), trimmed
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, minced
  • Salt and freshly ground black pepper, to taste
  • 4 large soft-boiled eggs, room temperature
  • 1 cup Greek yogurt or sour cream (240 ml)
  • 1 tablespoon fresh lemon juice
  • ¼ cup grated Parmesan cheese (25g), optional
  • 2 tablespoons chopped fresh herbs (parsley or chives)
  • 2 cups cooked grains or quinoa (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss broccoli florets with olive oil, minced garlic, salt, and pepper until well coated.
  3. Spread the broccoli evenly on the baking sheet and roast for 20-25 minutes, flipping halfway through, until tender and golden brown on edges.
  4. Bring a medium saucepan of water to a gentle boil. Carefully lower in the eggs and cook for 6 minutes.
  5. Transfer eggs to an ice bath for 2 minutes to stop cooking, then gently peel under running water.
  6. In a mixing bowl, whisk together Greek yogurt (or sour cream), lemon juice, grated Parmesan, salt, and pepper. Adjust seasoning to taste.
  7. If using grains, spoon cooked quinoa or rice into serving bowls. Top with roasted broccoli, then the creamy sauce.
  8. Nestle two soft-boiled eggs on top of each bowl, sprinkle with fresh herbs and cracked pepper. Drizzle a little olive oil if desired.
  9. Serve immediately to enjoy the creamy yolks mingling with the sauce and roasted veggies.

Notes

Use a timer to ensure perfectly soft-boiled eggs with jammy yolks. Start eggs at room temperature to reduce cracking. Roast broccoli at high heat for caramelized edges. For dairy-free, swap Greek yogurt with coconut yogurt and omit Parmesan or use vegan cheese. Store roasted broccoli and creamy sauce separately for up to 2 days; soft-boiled eggs best fresh or stored peeled in cold water for 1 day.
