A refreshing and creamy iced latte infused with floral lavender and smooth oat milk, perfect for a summer treat or brunch.

  • 2 shots (about 60ml / 2 fl oz) espresso or strong coffee
  • 1 cup (240ml) oat milk (barista blend recommended)
  • 1 teaspoon dried culinary lavender (food-grade)
  • 1 tablespoon honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • 1 cup ice cubes

Instructions

  1. Brew 2 shots (about 60ml / 2 fl oz) of espresso or ½ cup (120ml) strong coffee and set aside to cool slightly (2-3 minutes).
  2. In a small saucepan, combine 1 cup (240ml) oat milk with 1 teaspoon dried culinary lavender. Heat gently over medium-low heat until just steaming (4-5 minutes), avoiding boiling.
  3. Remove from heat and strain the oat milk through a fine mesh strainer into a bowl or pitcher, pressing lightly on the lavender buds to extract flavor.
  4. Stir in 1 tablespoon honey or maple syrup and ½ teaspoon vanilla extract while the milk is still warm. Adjust sweetness to taste.
  5. Let the lavender-infused oat milk cool to room temperature, then chill in the fridge for at least 10 minutes.
  6. Fill a tall glass with 1 cup ice cubes. Pour the cooled lavender oat milk over the ice, then slowly pour in the espresso shots to create layering.
  7. Optional: Froth a little extra oat milk and spoon it on top for a café-style finish.
  8. Garnish with a lavender sprig or a light dusting of dried lavender. Serve immediately.

Notes

Do not overheat the oat milk to avoid scorching. Use food-grade culinary lavender only. Larger ice cubes melt slower to keep the latte smooth longer. For vegan option, use maple syrup instead of honey. Freshly brewed espresso or strong coffee is recommended for best flavor.
