  • 1 cup shredded cheddar cheese (100g), sharp cheddar preferred
  • ½ cup blue cheese crumbles (75g), good-quality like Maytag
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Black pepper to taste, freshly ground if possible
  • Optional: 2 tbsp chopped fresh chives or green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, soften the cream cheese with a hand mixer or spoon until creamy.
  3. Add sour cream, buffalo hot sauce, garlic powder, onion powder, and black pepper. Mix well until fully incorporated and smooth.
  4. Fold in shredded cooked chicken and shredded cheddar cheese. Stir gently to combine evenly.
  5. Spoon the mixture into an 8×8 inch (20×20 cm) baking dish, smoothing the top with a spatula.
  6. Scatter blue cheese crumbles evenly over the top. Use a butter knife or skewer to gently swirl the blue cheese into the dip, creating pockets of flavor.
  7. Bake for 20-25 minutes until the dip is bubbly around the edges and the top is lightly golden.
  8. Once out of the oven, sprinkle chopped fresh chives or green onions over the dip for garnish.
  9. Serve warm with dippers such as celery sticks, tortilla chips, pita wedges, or sliced baguette.

Softening the cream cheese is crucial for a smooth dip. Use rotisserie chicken for best texture and flavor. Swirl blue cheese instead of mixing to avoid overpowering the dip.
