  • 1/2 tsp onion powder
  • 1 tsp Worcestershire sauce
  • Salt to taste (start with 1/4 tsp)
  • Black pepper to taste (start with 1/8 tsp)
  • 6 slices bacon, cooked crispy and crumbled (can substitute turkey bacon)
  • 2 tbsp sliced green onions (optional)
  • Soft pretzels or pretzel chips for dipping

Instructions

  1. Cook the bacon in a skillet over medium heat for 10-12 minutes until golden and crispy, flipping halfway through. Drain on paper towels and crumble once cooled.
  2. In a medium mixing bowl, combine softened cream cheese and mayonnaise. Use a hand mixer or stand mixer on medium speed until smooth and creamy.
  3. Stir in shredded cheddar cheese, Dijon mustard, garlic powder, onion powder, Worcestershire sauce, salt, and pepper.
  4. Slowly pour in the beer while mixing to avoid clumps. The mixture should be thick but spreadable. Add more cheddar if too runny.
  5. Taste and adjust flavor as needed; add a squeeze of fresh lemon juice for tang or more mayonnaise to mellow the dip.
  6. Chill the dip for at least 30 minutes to let flavors meld, or transfer to an oven-safe dish and bake at 350°F (175°C) for 15 minutes until bubbly and warm.
  7. Top with crispy bacon crumbles and sliced green onions just before serving.
  8. Serve with soft pretzels or pretzel chips.
