  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth (low-sodium preferred)
  • 1/2 cup heavy cream (or half-and-half or dairy-free alternative like coconut cream)
  • 46 slices prosciutto, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Rinse asparagus under cold water, trim woody ends, and cut into 1-inch pieces. Set aside.
  2. Melt butter in a large soup pot over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Add minced garlic and cook for 30 seconds to 1 minute until fragrant.
  4. Add asparagus pieces and broth. Bring to a boil, then reduce heat to simmer, cover, and cook for 15 minutes until asparagus is tender.
  5. While soup simmers, heat olive oil in a skillet over medium heat. Cook prosciutto slices for 2-3 minutes per side until crispy. Drain on paper towels.
  6. Remove soup from heat and blend with immersion blender until smooth and creamy. If using a countertop blender, blend in batches carefully.
  7. Return soup to pot, stir in heavy cream, and heat gently over low heat without boiling.
  8. Season with salt, pepper, and lemon juice if using.
  9. Ladle soup into bowls and top with crispy prosciutto and optional fresh herbs.

Notes

Do not overcook asparagus to avoid bitterness and dull color. Blend carefully to avoid splashing hot soup. Crisp prosciutto just before serving to keep it crunchy. If soup is too thick after blending, add broth or water to adjust consistency. For dairy-free version, substitute cream with coconut milk or cashew cream. Soup base can be frozen without cream for up to 2 months.
