These chewy trail mix bars with chocolate chips are an easy homemade snack recipe combining toasted nuts, oats, and melty chocolate for a perfect balance of chewy, crunchy, and sweet.

  • 1 ½ cups old-fashioned rolled oats
  • 1 cup mixed trail mix (nuts, seeds, and dried fruit)
  • ½ cup slivered almonds
  • ½ cup honey
  • ¼ cup brown sugar, packed
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Preheat oven to 350°F (175°C). Spread oats, slivered almonds, and trail mix on a baking sheet and toast for 8-10 minutes, stirring halfway through, until fragrant and lightly golden.
  3. In a medium saucepan, combine honey, brown sugar, and coconut oil. Warm over medium heat, stirring frequently, until sugar dissolves and mixture is smooth (3-5 minutes). Remove from heat and stir in vanilla extract, cinnamon, and salt.
  4. In a large bowl, mix toasted oats and nuts with the syrup mixture until evenly coated.
  5. Let mixture cool for about 5 minutes, then fold in chocolate chips.
  6. Transfer mixture to prepared pan and press firmly and evenly to compact.
  7. Bake for 15-18 minutes at 350°F (175°C) until edges are golden but center is still soft.
  8. Remove from oven and cool in pan for at least 30 minutes. Use parchment overhang to lift bars out and cut into 12 bars. Chill in fridge 10-15 minutes before cutting again if bars crumble.

Notes

Toast oats and nuts carefully to avoid burning. Press mixture firmly in pan to avoid crumbly bars. Add chocolate chips after cooling syrup to prevent melting. Chill bars before cutting if too soft. Store in airtight container at room temperature up to 5 days or refrigerate up to 2 weeks.
